How much dough can the Ankarsrum handle?

It is hard to beat the Ankarsrum Assistent Original when it comes to capacity and the volume you can bake. It is possible to make up to 5 kilos of dough with 1.5-2 liters of dough liquid at once thanks to the bowl holding 7 liters in volume and strength of the machine. This makes about 150 cinnamon rolls or 5-6 large loaves of bread. If you make this much at once, remember that you may need two bowls for proving the dough.

How is the Ankarsrum stand mixer different from a KitchenAid stand mixer?

While the KitchenAid has its motor in its head which spins the attachment, the Ankarsrum’s motor is in the base and spins the bowl. Ankarsrum mimics hand kneading with a dough roller, but also includes a standard dough hook.

The Ankarsrum's unique design, with its rotating bowl and stationary roller/scraper that mimics gentle hand kneading feels very different from the spinning attachments most bakers know. It takes some getting used to, but bakers agree: Ankarsrum handles more dough, better!
