Long before we collaborated on Fishing Knives and Roasting Pans, Tom mentioned this specific Carbon Steel Frying Pan a lot—almost enough to make us jealous, and definitely enough to make us curious. That led us first to a 3D printer, where we scanned Tom’s perfect pan, undoing 30 years worth of James Beard Award-winning cooking and hard-earned seasoning, to finally (re)create Tom’s Pan, which he purchased from Zabar’s in the 1980s.
Our Carbon Steel combines the heat retention of Cast Iron with the control and maneuverability of Stainless Clad, resulting in a natural non stick alternative. We stamp Carbon Steel into a thin disc that’s half the weight of cast iron but every bit as durable—so it seasons faster, responds quicker, and is rugged enough for your grill or open flame.
The pan clocks in at 2.5mm thick—compared to our standard 2.0mm—to add extra heft, quality, and durability. The 100% brass handle is long and easy to reach, even from the back of the oven. Brass develops its own unique patina and character over time, evolving alongside the Pan’s seasoning.

Pro-tip: Building up the pan's seasoning takes time, so avoid over-scrubbing!
Will your carbon steel pan rust? Yes, it can! To avoid rusting, we recommend:
- Dry the pan immediately after washing with a towel to remove all moisture. Or, place on a warm burner to evaporate all moisture.
- Rub a very small amount of high-smoke-point oil over the cooking surface to season it. Keeping it seasoned is the best way to care for your carbon steel cookware over time.
