Hailing from Bombay, this blend of chilies, paprika, cumin, corinader, cardamom, celery, bay leaves, garlic, fenugreek, methi, black pepper, and salt works on any protein as a wet or dry rub and a little bit can add depth to root vegetable soups. Blend with yogurt to marinate chicken or fish for grilling.
