Our shop Toque Blanche is named not just for a unique hat, but for the rich history that this hat represents. The term Toque Blanche, meaning white hat, was born of a culinary mythology that only the French could provide. The tale of this tall white hat goes back hundreds of years, and inspired the name of our shop!The chef's hat is symbolic of the cook's regal role, one that became a ranked profession marked by expertise and prominence. The hygienic white chef uniform gave the profession respectability, and the pleats and height of the chef's hat alerted everyone to their mastery of cooking techniques and rank in the kitchen. Like a general on a battlefield, no one could miss the person wearing the tallest hat in the kitchen. And for every pleat achieved, it meant another recipe mastered. Myth would have it, those 100 pleats were 100 ways to cook an egg.
