While gas stovetops distribute heat quite evenly, your pans can still have hot spots where your food will scorch. And with electric stoves, your recipes will absolutely cook better with a heat diffuser. Pro-tip, if your recipe calls for slow cooking on a simmer for a long period of time, you should get a heat diffuser.

You can use this copper diffuser on gas, electric coil and electric glass/ceramic stove tops. But still, don't crank your stove to the highest setting. Aim for medium high heat. It works better that way!
