The Wüsthof Classic Artisan Butcher Knife is a hollow-edge knife with an 8" blade. A butcher's knife is designed and used primarily for cutting, sectioning and trimming large pieces of meat. The heftier, wide blade works well for splitting and stripping meat to create smaller pieces that may need additional preparation. The design of the blade is different than the carving knife or cleaver, which are designed with a smaller or thinner blade. The hollow-edge of this knife improves the separation of the sliced cuts of meat.
Made in Solingen Germany, knives in the Wüsthof Classic series are precision forged from a single piece of high-carbon stainless steel. This steel holds its 15° edge and retains its sharpness 30% longer than other steels. A full-tang with triple-riveted POM handle provides durability. POM (Polyoxymethylene) handles are durable and easy to clean. They are also resistant to high heat and have less water absorption than other plastic handles.
